We’ll cut to the chase. We were disappointed in Bistro Burger. We’re not saying it’s bad; we’re just saying it’s adequate. And usually, when Eduardo Vargas has his name on something it surpasses ‘adequate.’ The concept should be a slam-dunk (it’s certainly worked well elsewhere in town). But the execution just leaves us cold. A burger like the Tuscan (mozzarella, aioli, arugula, sun dried tomato on an olive-rosemary bun, RMB60) looks great on the menu, but at the table nothing particularly stands out about it. What’s more, it’s slightly over-cooked. French fries (which, by the way, are a la carte) sometimes taste like they’ve been waiting under a heat lamp. And the milkshakes (RMB25)? Let’s just say they won’t bring all the boys to the yard. They’re just too lean. True, we’ve had a lot worse in this city, but, in this case, we expected a lot better.
